Juicy, smoky, and caramelized chicken skewers that are foolproof to make. This recipe uses a simple smoked paprika rub and a BBQ glaze for maximum flavor without complicated marinades.

- 2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon granulated sugar
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- ½ cup sweet-and-smoky BBQ sauce
- 2 tablespoons melted butter
Instructions
- Cut chicken thighs into 1-inch cubes and place in a large bowl.
- In a small bowl, mix smoked paprika, garlic powder, onion powder, sugar, salt, and pepper.
- Pour the spice rub over the chicken and toss with hands until evenly coated. Let sit for 10 minutes.
- Thread chicken onto skewers, leaving space between pieces. Use metal skewers or soak wooden ones in water for 30 minutes.
- Preheat grill to medium heat (approx. 375°F) and lightly oil the grates.
- Place skewers on the grill, close the lid, and cook for 6-7 minutes on the first side.
- Flip skewers and cook for another 6-7 minutes until internal temperature reaches 165°F.
- During the last 2 minutes of cooking, brush skewers generously with BBQ sauce and close the lid to caramelize.
- Remove from grill and let rest for 2 minutes before serving.
Notes
Use chicken thighs for juiciness; breasts can dry out. Do not overcrowd skewers to ensure proper charring. Add BBQ sauce only in the last 2-3 minutes to prevent burning the sugar. Rest chicken for 2 minutes before serving to retain juices.
