Description

Ingredients

  • ½ cup (50g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • ⅓ cup (80ml) vegetable oil (canola or sunflower)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated zucchini (about 1 medium zucchini / 180g), freshly shredded
  • 1 cup (175g) semi-sweet chocolate chips
  • Optional: ½ cup chopped walnuts or pecans
  • Optional: 1 teaspoon espresso powder

Instructions

  1. Grate zucchini using a box grater or food processor; do not squeeze out moisture. Set aside.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk sugar, vegetable oil, eggs, and vanilla extract until smooth and slightly fluffy.
  4. Add wet ingredients to dry ingredients and gently fold with a spatula until just combined.
  5. Fold in grated zucchini, chocolate chips, and nuts if using, until evenly distributed.
  6. Pour batter into a greased or parchment-lined 9×5 inch loaf pan.
  7. Bake at 350°F (175°C) for 55-60 minutes, starting to check at 50 minutes with a toothpick; it should come out with a few moist crumbs.
  8. Cool bread in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not drain the zucchini to keep the bread moist. Use freshly grated zucchini for best texture. Start checking for doneness at 50 minutes to avoid overbaking. Fold ingredients gently to keep bread tender. Toss chocolate chips in flour before folding to prevent sinking. Bread tastes better the next day and can be stored at room temperature, refrigerated, or frozen.
