Description
A creamy, vibrant, and energizing dairy-free iced matcha latte made with ceremonial grade matcha, oat milk, and a homemade honey vanilla syrup. This drink provides calm, focused energy without the jitters of coffee.

- 2 teaspoons ceremonial grade matcha powder
- 2 tablespoons hot water (175°F / 80°C)
- 1 cup oat milk (or almond/coconut milk)
- 1/2 cup raw honey
- 1/2 cup water
- 1 teaspoon pure vanilla extract
- Ice cubes
- Extra matcha powder for dusting (optional)
Instructions
- Make the honey vanilla syrup: In a small saucepan, combine honey and water. Heat over medium-low heat, stirring constantly until the honey is dissolved and the mixture is slightly thickened (about 5 minutes). Remove from heat and stir in vanilla extract. Let cool completely.
- Prep the matcha paste: Sift 2 teaspoons of matcha powder into a small bowl to remove clumps. Add 2 tablespoons of hot water (not boiling). Whisk vigorously in a ‘W’ motion using a bamboo whisk until the paste is smooth, bright green, and frothy.
- Assemble the latte: Fill a large glass with ice cubes. Pour in the milk, then add 1-2 tablespoons of the cooled honey vanilla syrup. Stir gently to combine.
- Pour the matcha: Slowly pour the matcha paste over the milk to create green swirls. Alternatively, stir to mix completely.
- Garnish and serve: Sift a tiny pinch of matcha over the top for decoration. Serve immediately with a straw.
Notes
Store matcha in the fridge to keep it bright green and fresh. Never use boiling water for matcha as it makes it bitter. The honey vanilla syrup can be made in bulk and stored in the fridge for up to two weeks. Do not store the assembled latte; make it fresh for best flavor and color.
