- 1.5 to 2 pounds boneless, skinless chicken breasts
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 4 ounces cream cheese, softened and cubed
- 1/2 cup sun-dried tomatoes packed in oil, chopped (plus 1 tbsp oil)
- 4–5 cloves garlic, minced
- 2 teaspoons Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3–4 cups fresh baby spinach
Instructions
- Pat chicken breasts dry and season both sides with salt, pepper, and half of the Italian seasoning.
- Pour chicken broth into the bottom of a 6-quart slow cooker to prevent sticking.
- Place seasoned chicken breasts in the pot in a single layer.
- Scatter minced garlic and chopped sun-dried tomatoes (with oil) over the chicken.
- Sprinkle remaining Italian seasoning and red pepper flakes evenly.
- Pour heavy cream over everything.
- Cover and cook on High for 4-5 hours or on Low for 6-7 hours until chicken reaches 165°F.
- Remove chicken from pot and let rest for 5 minutes.
- Whisk softened cream cheese into the hot sauce until smooth and fully incorporated.
- Shred chicken with two forks and return to the pot.
- Stir in fresh spinach; let residual heat wilt spinach for 2 minutes.
- Serve immediately over pasta, rice, or with crusty bread.
Notes
For best results, use softened cream cheese to prevent clumping. If the sauce is too thick, add a splash of pasta water or milk. Leftovers store in the refrigerator for up to 4 days. This recipe does not freeze well due to the dairy content.
