  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened and cubed
  • 1/2 cup sun-dried tomatoes packed in oil, chopped (plus 1 tbsp oil)
  • 45 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 34 cups fresh baby spinach

Instructions

  1. Pat chicken breasts dry and season both sides with salt, pepper, and half of the Italian seasoning.
  2. Pour chicken broth into the bottom of a 6-quart slow cooker to prevent sticking.
  3. Place seasoned chicken breasts in the pot in a single layer.
  4. Scatter minced garlic and chopped sun-dried tomatoes (with oil) over the chicken.
  5. Sprinkle remaining Italian seasoning and red pepper flakes evenly.
  6. Pour heavy cream over everything.
  7. Cover and cook on High for 4-5 hours or on Low for 6-7 hours until chicken reaches 165°F.
  8. Remove chicken from pot and let rest for 5 minutes.
  9. Whisk softened cream cheese into the hot sauce until smooth and fully incorporated.
  10. Shred chicken with two forks and return to the pot.
  11. Stir in fresh spinach; let residual heat wilt spinach for 2 minutes.
  12. Serve immediately over pasta, rice, or with crusty bread.

Notes

For best results, use softened cream cheese to prevent clumping. If the sauce is too thick, add a splash of pasta water or milk. Leftovers store in the refrigerator for up to 4 days. This recipe does not freeze well due to the dairy content.
