Description

  • 2 tablespoons vegetable oil
  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter (melted)
  • 45 cloves garlic (minced)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Pat chicken wings completely dry with paper towels.
  2. In a large mixing bowl, combine baking powder, garlic powder, onion powder, salt, and black pepper.
  3. Add dried wings to the bowl, drizzle with vegetable oil, and toss until evenly coated.
  4. Place a wire rack inside a rimmed baking sheet. Arrange wings in a single layer on the rack, ensuring they are not touching.
  5. Bake for 40-45 minutes, flipping wings halfway through (around 20 minutes), until skin is golden brown and crispy and internal temperature reaches 165°F.
  6. While wings bake, melt butter in a small saucepan or microwave-safe bowl over low heat.
  7. Remove butter from heat and stir in minced garlic, grated Parmesan cheese, and red pepper flakes (if using) until smooth.
  8. Transfer baked wings to a large bowl, pour sauce over them, and toss gently to coat.
  9. Sprinkle with fresh chopped parsley and serve immediately.

Notes

Patting wings dry is crucial for crispiness. Letting wings sit uncovered in the fridge for 1-2 hours after drying helps air-dry the skin further. Use fresh garlic and grate your own Parmesan for best results. Do not overcrowd the pan. If wings are soggy, ensure they are spaced out and flipped halfway through.
