Instructions

  1. Preheat oven to 400°F (200°C). Place a wire rack on a rimmed baking sheet and spray lightly with cooking spray.
  2. Slice chicken breasts into 1-inch wide strips, trimming thick ends for uniform size. Pat dry with paper towels.
  3. Set up a dredging station with three shallow bowls: one with flour mixed with half the seasonings, one with beaten eggs, and one with panko mixed with remaining seasonings.
  4. Dredge each chicken strip in flour, dip in egg wash, then press firmly into panko breadcrumbs. Place on a clean plate.
