A bright, sweet, and incredibly refreshing green smoothie that masks the taste of spinach with tropical pineapple and creamy coconut milk. It provides steady energy without the crash and is ready in just 5 minutes.
Ingredients
- 1 ½ cups frozen pineapple chunks
- 2 cups fresh baby spinach, packed
- ½ cup full-fat coconut milk (canned)
- ½ cup orange juice
- 1 tablespoon chia seeds
- 1 tablespoon honey or maple syrup (optional)
- 1 scoop protein powder (optional)
- Ice cubes (only if using fresh pineapple)
Instructions
- Rinse the fresh spinach if necessary and ensure the pineapple is frozen.
- Pour the orange juice and coconut milk into the blender first to help the blades spin freely.
- Add the spinach, chia seeds, and protein powder (if using) to the blender.
- Top with the frozen pineapple chunks and ice (if needed).
- Blend on low speed, gradually increasing to high, for 45-60 seconds until completely smooth and creamy.
- Taste the smoothie and adjust sweetness with honey or thickness with more liquid/ice if needed.
- Pour into glasses and serve immediately.
Notes
Use frozen fruit for a thick, slushy texture. If using fresh pineapple, add a cup of ice. Full-fat canned coconut milk is essential for creaminess; do not use carton beverage milk. The smoothie is best fresh but can be stored in the fridge for up to 24 hours; stir well before drinking if separated.
