Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, whisk together the cocoa powder, 1 cup granulated sugar, salt, and baking powder until no lumps remain.
  3. Add the eggs, oil, and vanilla extract to the dry ingredients. Stir with a whisk or spoon until a thick, dark, glossy dough forms.
  4. Place the 1/2 cup granulated sugar in a small shallow bowl and the powdered sugar in a sieve or small bowl.
  5. Scoop about 1 tablespoon of dough and roll it into a tight ball between your palms, ensuring no surface cracks.
  6. Roll the dough ball in the granulated sugar until fully coated, then place on the baking sheet 2 inches apart.
  7. Bake for 10-12 minutes until edges are set and cracked but centers still look slightly soft.
