Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Wash and trim zucchini ends. Shred on large holes of a box grater. Wrap shredded zucchini in a clean kitchen towel or paper towels and squeeze tightly to remove excess moisture. Set aside.
  3. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  4. In a large bowl, beat softened butter, light brown sugar, and granulated sugar with a hand mixer on medium speed for 2-3 minutes until light and fluffy. Scrape down sides.
  5. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  6. Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix.
  7. Gently fold in squeezed zucchini and chocolate chips (and nuts if using).
  8. Scoop dough balls (about 2 tablespoons each) onto prepared sheets, spacing 2 inches apart.
  9. Bake for 12-15 minutes, or until edges are golden brown but centers look slightly soft.
  10. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
