A budget-friendly, single-serving cheesy chicken broccoli rice casserole designed to minimize food waste and cost while maximizing comfort and flavor.

- 1 small/medium chicken breast (6–8 oz / 170-225g), chopped or shredded
- 1 cup cooked white rice (150g)
- 1 cup frozen broccoli florets (90g)
- 1/2 cup chicken broth (120ml)
- 1/2 cup half-and-half (120ml)
- 1 cup shredded sharp cheddar cheese (100g), divided
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 2 tablespoons panko breadcrumbs (optional)
Instructions
- Preheat oven to 375°F (190°C).
- If using raw chicken, chop into 1-inch cubes. If using leftover cooked chicken, shred or chop it. Set aside.
- Steam or microwave the frozen broccoli with a splash of water for 2-3 minutes until tender. Drain excess water and squeeze dry thoroughly with hands or a towel.
- In a 9×5-inch loaf pan or small baking dish, whisk together chicken broth, half-and-half, garlic powder, onion powder, salt, and pepper.
- Add the cooked rice, chicken, and steamed broccoli to the sauce. Stir to coat evenly.
- Stir in 3/4 cup of the shredded cheddar cheese. Sprinkle the remaining 1/4 cup of cheese on top.
- If using, sprinkle panko breadcrumbs over the top.
- Bake for 15-20 minutes until cheese is bubbly and starting to brown. If covered with foil, remove for the last 5 minutes to brown.
- Let rest for 5 minutes before serving to allow sauce to thicken.
Notes
Ensure frozen broccoli is squeezed dry to prevent a watery casserole. Leftover rice works best as it absorbs sauce without getting mushy. Pre-shredded cheese contains anti-caking agents that prevent smooth melting; shred from a block if possible.
