A rich, creamy, and smoky casserole that combines sweet blintz batter with a tangy cheese filling, cooked in a smoker for a festive Yom Kippur break fast.

- 4 large eggs, room temperature
- 1 cup whole milk
- 1/4 cup vegetable oil
- 1 cup all-purpose flour
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 16 oz full-fat cream cheese, softened
- 3/4 cup sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 cup cottage cheese
- Zest of 1 lemon
- 1 teaspoon vanilla extract
- 1/4 cup melted butter
- 2 tablespoons sugar
- 1 teaspoon cinnamon
- Chopped pecans or walnuts (optional)
Instructions
- Preheat smoker or grill to 325°F (160°C) using hickory or applewood chips. Let it preheat for 15 minutes.
- In a blender, combine eggs, milk, oil, flour, sugar, salt, and vanilla. Blend on high for 30-60 seconds until smooth. Let batter sit for 10 minutes.
- In a large bowl, beat softened cream cheese until smooth. Add 3/4 cup sugar, 2 eggs, sour cream, cottage cheese, lemon zest, and vanilla. Mix until creamy and well combined.
- Pour the thin batter into a 9×13 inch baking dish.
- Spoon the cheese filling over the batter and spread evenly to cover.
- Drizzle melted butter over the cheese layer and sprinkle with cinnamon sugar mixture.
- Place dish in smoker for indirect heat. Cover loosely with aluminum foil and smoke for 30 minutes.
- Remove foil and smoke for another 15-30 minutes until the center is set and top is golden brown.
- Remove from smoker and let rest for 10 minutes before serving.
Notes
Ensure cottage cheese is blended or mashed finely to avoid curds. Do not rush the resting time, as the casserole needs to set to cut cleanly. If using a gas grill, set up for indirect heat and use a wood chip pouch for smoke flavor.
