A smoky, sweet, and messy dessert featuring grilled Honeycrisp or Fuji apples topped with warm caramel, dark chocolate, toasted peanuts, and sea salt flakes.

- 6–8 medium large firm apples (Honeycrisp, Fuji, or Gala), cored and sliced into half-inch wedges
- 2 tablespoons neutral oil (canola or vegetable)
- 1 cup smoking wood chips (hickory or applewood), soaked in water for 30 minutes
- 1 cup caramel sauce
- 1 cup dark chocolate chips (60% cocoa)
- ½ cup roasted peanuts, toasted and coarsely chopped
- 1 teaspoon sea salt flakes
- Vanilla ice cream (optional, for serving)
Instructions
- Preheat grill to medium heat (350-375°F / 175-190°C) using indirect heat. Load smoker box with soaked wood chips and wait for white smoke to appear.
- Wash, core, and slice apples into wedges. Toss wedges with neutral oil and a pinch of salt until lightly coated.
- Place apple wedges on grill grates perpendicular to bars. Close lid and grill for 4-5 minutes until grill marks appear and edges char slightly.
- Flip apples carefully and grill for another 3-4 minutes until tender but holding shape. Remove to a plate.
- While apples grill, toast peanuts in a dry skillet over medium heat for 2-3 minutes until fragrant and golden. Chop coarsely.
- Melt chocolate chips in 30-second intervals in microwave or using a double boiler until smooth. Warm caramel sauce until pourable.
- Arrange grilled apples on a large platter. Drizzle generously with warm caramel and melted chocolate in a zigzag pattern.
- Sprinkle toasted peanuts and sea salt flakes over the top. Serve immediately.

Use firm apples like Honeycrisp or Fuji to prevent mushiness. Keep the grill lid closed to maintain smoke infusion. Ensure all equipment is dry when melting chocolate to prevent seizing. Best served immediately while warm.
