- 4 medium sweet potatoes (about 2 lbs / 900g)
- 2 cups shredded rotisserie chicken (about 300g)
- 2 tablespoons unsalted butter
- ½ cup buffalo sauce (e.g., Frank’s RedHot Original)
- 4 oz full-fat brick cream cheese
- 2 cloves garlic, minced
- ½ cup blue cheese dressing
- 3 stalks green onions, sliced
- ½ cup shredded cheddar or Monterey Jack cheese
- Cilantro, chopped (optional)
Instructions
- Wash and scrub sweet potatoes. Poke holes all over with a fork to prevent bursting.
- Microwave potatoes on high for 5 minutes, flip, then microwave for another 5-10 minutes until tender. Let rest for 5 minutes.
- Shred the chicken, removing skin and bones.
- In a small saucepan over low heat, melt butter, cream cheese, and buffalo sauce together until smooth.
- Stir in minced garlic and shredded chicken. Cook for 2-3 minutes until heated through and coated.
- Slice cooked sweet potatoes lengthwise, leaving the bottom intact. Fluff the inside flesh with a fork.
- Divide the buffalo chicken mixture evenly among the four potatoes.
- Top with shredded cheddar or Monterey Jack cheese.
- Microwave for 1-2 minutes or broil for 2-3 minutes until cheese is melted and bubbly.
- Drizzle with blue cheese dressing and sprinkle with sliced green onions. Serve immediately.
Notes
Ensure you poke holes in the potatoes to prevent them from exploding in the microwave. If the cream cheese is cold, let it sit out for 15 minutes or microwave for 10 seconds to soften. This recipe is naturally gluten-free, but check labels on sauces. Leftovers can be stored in the fridge for up to 3 days.
