  • 45 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon extra salt

Instructions

  1. Brown the butter: Melt butter in a medium saucepan over medium heat, stirring constantly until it foams, crackles, and turns deep golden brown with a nutty aroma (3-5 minutes). Immediately remove from heat and pour into a heat-proof bowl to cool slightly.
  2. Mix the dough: In a large mixing bowl, whisk together flour, instant yeast, sugar, and salt. Make a well and pour in warm milk and egg. Mix until a shaggy dough forms. Cover and let rest for 10 minutes.
  3. Shape the rolls: Turn dough onto a lightly floured surface. Divide into 9-12 equal pieces and roll into smooth balls. Place seam-side down in a greased 9×13 inch baking dish. Cover loosely and let rise for 15-20 minutes.
  4. Make the glaze: Whisk the cooled brown butter with minced garlic, chopped parsley, red pepper flakes, and extra salt.
  5. Bake: Preheat oven to 375°F (190°C). Brush the glaze generously over the risen rolls. Bake for 18-20 minutes until golden brown and hollow when tapped.
  6. Cool and serve: Let cool in the pan for 5 minutes. Brush with extra glaze if desired and serve warm.

Notes

Ensure milk is warm (around 110°F) but not hot to avoid killing the yeast. Do not over-knead the dough to maintain softness. If the brown butter burns, start over as it cannot be salvaged. Rolls can be stored in an airtight container for up to 2 days or frozen for up to 3 months.
