  • 2 pounds boneless, skinless chicken breast, sliced into thin strips
  • 3 large bell peppers (red, green, yellow), sliced into half-inch strips
  • 2 large yellow onions, sliced into half-inch wedges
  • 1/4 cup avocado oil (divided use)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1216 flour tortillas
  • Optional toppings: Sour cream, shredded cheddar, fresh cilantro, lime wedges, salsa

Instructions

  1. Slice chicken into quarter-inch strips against the grain. Slice peppers and onions into half-inch strips/wedges.
  2. In a large bowl, toss chicken strips with 2 tablespoons of avocado oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. Preheat the Blackstone griddle to medium-high heat for 10-15 minutes until hot enough for water to dance on the surface.
  4. Scrape a clean rectangle in the center of the griddle to create a cooking zone.
  5. Spread sliced peppers and onions over the clean center zone. Drizzle with a little oil and let sit undisturbed for 2 minutes to char.
  6. Toss vegetables every 2 minutes until tender-crisp and blackened (8-10 minutes). Remove to the side to keep warm.
  7. Push veggies to the edges. Pour seasoned chicken into the center zone in a single layer. Sear for 1 minute, then flip and toss.
  8. Cook chicken for 5-7 minutes until no longer pink and charred bits form. Do not overcrowd.
  9. Mix chicken back with vegetables. Taste and adjust seasoning if needed.
  10. Serve immediately with warm tortillas and optional toppings.

Notes

Ensure the griddle is very hot to achieve char rather than steaming. Slice vegetables uniformly for even cooking. Keep tortillas warm to prevent cracking. If cooking for a large crowd, cook in batches to avoid lowering the griddle temperature.
