Chewy, cakey, and buttery blondies infused with vanilla birthday cake flavor, loaded with colorful sprinkles and melty white chocolate chunks.

- 1 cup (226g) unsalted butter, melted
- 1 cup (200g) light brown sugar
- ½ cup (100g) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup jimmies (sprinkles)
- 1 cup (170g) white chocolate chunks
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease.
- Melt the butter in the microwave or saucepan and let it cool slightly so it is warm but not hot.
- In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar vigorously for about 2 minutes until glossy and thickened.
- Add the eggs and vanilla extract, whisking until fully combined and smooth.
- Sift the flour, baking powder, and salt over the wet mixture. Fold in gently with a spatula until just combined; do not overmix.
- Fold in the sprinkles and white chocolate chunks.
- Pour batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, until edges are golden brown but the center still looks slightly underbaked/jiggly.
- Cool completely in the pan on a wire rack (at least 30 minutes) before lifting out and cutting into squares.
Notes
Do not overbake; blondies continue to cook in the pan after removal. Use real vanilla extract for best flavor. Chop white chocolate bars for better texture than chips. Store in an airtight container at room temperature for up to 5 days.
