Bakery-Style Blueberry Muffins: Easy 30-Min Recipe

  • Author: SOFIA
  • Total Time: 30 minutes
  • Yield: 12 servings 1x

Description

These bakery-style blueberry muffins are a fast, one-bowl recipe that yields tall, domed tops with a crunchy sugar crust. Perfect for busy weeknights, they are moist, tender, and ready in just 30 minutes.

Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 3/4 cup (150g) granulated sugar (for batter)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted
  • 2 large eggs
  • 1/2 cup (120ml) whole milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (225g) fresh or frozen blueberries
  • 2 tablespoons granulated sugar (for topping)
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon extra granulated sugar (for sprinkling)
  • 1 tablespoon melted butter (for brushing tops)

Instructions

  1. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with liners or grease thoroughly.
  2. In a large bowl, whisk together the flour, 3/4 cup sugar, baking powder, and salt.
  3. In a separate bowl, whisk the melted butter, eggs, milk, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined; batter should be lumpy. Do not overmix.
  5. Gently fold in the blueberries. If using frozen berries, toss them in a tablespoon of flour first to prevent sinking.
  6. Divide batter evenly among muffin cups, filling them almost to the top.
  7. Mix 2 tablespoons sugar and cinnamon. Brush tops of muffins with melted butter, then sprinkle generously with cinnamon sugar and a final dusting of plain sugar.
  8. Bake at 400°F for 18-20 minutes until golden brown and a toothpick comes out clean.
  9. Cool in pan for 5 minutes, then transfer to a wire rack to let the sugar topping crisp.

Notes

High heat (400°F) is crucial for tall domes. Do not overmix the batter to ensure tender muffins. If using frozen blueberries, keep them frozen and toss in flour before folding in to prevent sinking. Fill liners to the brim for best rise. The sugar topping caramelizes best when brushed with butter first.
