Description
These mini corn dog muffins are a quick, kid-approved, and portable dinner solution perfect for busy weeknights and lunchboxes. They combine hot dogs and cornbread mix baked in muffin tins for a fun and easy meal.
Ingredients
- 8–10 hot dogs, cut into bite-sized pieces
- 1 box Jiffy cornbread mix (8.5 oz / 241g)
- 2/3 cup milk (160 ml), whole milk preferred
- 1 large egg
- 1 tablespoon yellow mustard
- 1 tablespoon honey or maple syrup
- 1/4 cup vegetable oil (60 ml)
- Optional: 1/2 cup shredded cheddar cheese (50g)
- Optional: chopped jalapeños
- Optional: diced onions
Instructions
- Preheat oven to 375°F (190°C). Spray muffin tin with non-stick spray or line with paper liners. Chop hot dogs into 1-inch bite-sized pieces.
- In a large bowl, combine cornbread mix, milk, egg, mustard, honey, and vegetable oil. Whisk until smooth but do not overmix. Fold in cheese or jalapeños if using.
- Spoon about 1/3 of batter into each muffin cup. Press 1-2 pieces of chopped hot dog into the center. Top with more batter to almost fill the cup, leaving hot dogs slightly exposed.
- Bake for 15-18 minutes until tops are golden and a toothpick inserted near the edge comes out clean. Start checking after 12 minutes to avoid burning.
- Let muffins cool in the pan for 5 minutes before removing. Serve warm with ketchup, mustard, or favorite dipping sauce.
Notes
Do not overmix the batter to keep muffins tender. Use a toothpick to test doneness near the edge, avoiding the hot dog pieces. Room temperature eggs and milk help batter come together smoothly. Adjust baking time if using mini muffin pans. For dairy-free, substitute milk with almond or oat milk and use vegan egg replacer. Leftovers reheat well in microwave or toaster oven.
